Gekkenhuis.

De afgelopen én komende dagen is het een absoluut gekkenhuis bij The Blacksmith’s Meadery. Er is al een hele hoop werk verzet maar er ligt nog een butt-ton aan verse taken op de plank.

Zaterdag hebben we de test batch van The Fourth King gebotteld. Dit is een van onze braggots die werd vergist met een Belgische abdijgist. Hij werd gehopt met Equinox en Saaz en gedryhopt met Citra en Mandarina Bavaria. Het resultaat is een heerlijk esterig medebier met aroma’s van tropisch fruit, citrus en groene appel. Nu kan hij nog een paar weken hergisten op fles. Binnen een goeie maand tot zes weken zou The Fourth King beschikbaar moeten zijn.

Ondertussen is onze Lux in Tenebris eindelijk volledig verkoopsklaar. Gisteren zijn de labels binnengekomen en hebben we ons meteen op de batch gestort. Hij verschijnt later vandaag al in de webshop. Je kan hem, net als Sanguis Regis (droge bramenmede), Sanguis Regis Plus Ultra (zoete bramenmede met een overdosis fruit) en The Blacksmith’s Grand Reserve (klassieke mede) komen ontdekken tijdens het Modeste Bierfestival op 5 en 6 oktober in de gebouwen van brouwerij De Koninck aan de Boomgaardstraat in Antwerpen. Leuk detail: De drie laatste medes zijn al wel klaar maar moeten nog gebotteld worden. Stress? Ach welnee…

The last few days I’ve been living in a complete nuthouse and the next few days aren’t looking any better. We’ve completed a lot of work already, but there’s still a metric butt-tonne left to be tackled in the coming days.

Last Saturday we bottled The Fourth King. That’s our new braggot (60 liter / 15 gal test batch).We fermented it with a Belgian (duh) abbey yeast and it was hopped with Equinox and Saaz. For dry-hopping we used Citra and Mandarina Bavaria. The resulting liquid has beautiful esters with aromas of tropical fruit, citrus and green apples. For now it’s refermenting, so in a month to six weeks The Fourth King should be available.

In the meantime Lux in Tenebris is finally ready to enter the market. We got the labels yesterday and went at it like the Tasmanian Devil. Later today Lux in Tenebris will become available in the webshop. You could, of course, come an meet it in person, along with Sanguis Regis (off-dry blackberry mead), Sanguis Regis Plus Ultra (sweet blackberry mead with a fruit overdose) and The Blacksmith’s Grand Reserve (traditional) at the Modeste Bierfestival on October 5the and 6th in the old brew hall of the De Koninck brewery (Boomgaardstraat, Antwerp). Cool detail: Those last three meads are ready but still need to be bottled. Stress? Naaaaaah…

Twee jaar alweer… Op 6 november 2016 hebben we The Blacksmith’s Meadery opgericht. Ondertussen zijn we dus twee jaar verder. We hebben in die twee jaar al heel wat gerealiseerd en er zit nog veel meer in de pijplijn. Er zijn een aantal zaken waar we nog niet al te veel over kunnen uitweiden maar nog voor onze derde verjaardag gaan er weer heel wat veranderingen en spannende dingen gebeurd zijn.

Wat we al wel kunnen vertellen is dat er volgende week een aantal nieuwe batches gebotteld zullen worden. The Blacksmith’s Grand  Reserve is klaar en staat te bekomen van zijn laatste transfer naar het bottelvat. Ook de Yule Mead staat te popelen om op fles gezet te worden. Hiervan zullen een 100 flesjes van 37,5 cl beschikbaar zijn. De 50 overige zijn voor Miel du Ciel uit Mortsel die de honing voor deze mede geleverd hebben.

De Moretum en Aqua Diabolica zijn volledig uitgegist. Zij worden in de loop van volgende week van hun extra ingrediënten voorzien. Beide medes zullen overigens deelnemen aan de Mazer Cup International in Denver in maart 2019.

Op 23 november wordt het eerste flesje Incus II geopend. Als hij voldoende hergist is, wordt hij meteen aan de webshop toegevoegd.

Two years alreday. Time flies like an arrow. On November 6th 2016 we officialy founded The Blacksmith’s Meadery . The past two years we acomplished some great things and there’s a lot more in the pipeline. We can’t elaborate on certain things as of yet, but rest assured that come our third birthday some major changes and amazing stuff will have happened.

What we can tell you about is that next week we’ll be bottling some new batches. The Blacksmith’s Grand Reserve is ready. For now it’s relaxing in the bottling vat. The Yule Mead also is anxious to get bottled. We’ll be releasing 100 37,5 cl bottles. The 50 other bottles in the batch are for Miel du Ciel, the beekeeper that provided the honey for this batch.

Moretum and Aqua Diabolica are completely done fermenting. (For the technical people among us: they both are at 0.997). Sometime next week they will have their other ingredients added. Both meads will be competing in the Mazer Cup International in Denver, March 2019.

November 23rd we’ll be opening the very first bottle of Incus II. If the carbonation level is sufficient it will be added to the webshop immediately.

Cherrynomus & Incus: update

Alles gaat perfect dusver. Zowel Cherrynomus Bosch als Incus zitten op schema wat de vergisting betreft. Morgenavond wordt Cherrynomus een eerste keer overgeheveld (en in één beweging een eerste keer gefilterd om de actieve gist te verwijderen). Incus II krijgt mag nog even voort rijpen op het vat. Later krijgt hij dan zijn dry hopping en mag hij nog even op eik gaan rusten.

So far so good. Both Cherrynomus Bosch and Incus are right on schedule fermentation wise. Tomorrow night Cherrynomus will be transferred a first time (whilst being filtered in the same go to remove the active yeast cells). Incus II will mature a bit longer in the fermentation vessel. Later it will be dry hopped and layered on oak.

Incus / The Blacksmith’s Meadery (Deurne)

Le pitch:
Un petit producteur d’hydromel flamand a décidé de rendre hommage à son nom de famille (De Smet, le forgeron) et à un style oublié. Cette Incus, enclume en latin, est un des rares « braggot » disponible sur le marché belge. Mélange de bière herbacée et d’hydromel, elle monte vite en alcool tout en restant douce et houblonnée avec du Equinox et Goldings. Pour retrouver la recette de curieux mélange, il faut remonter loin dans le temps même si une dispute très moderne oppose différents pays revendiquant l’invention du braggot. Les contes de Canterbury (1476) sont la première source écrite mentionnant ce type de bière, l’attribuant à l’Angleterre. Mais des traces archéologiques plus anciennes situeraient son origine en Irlande, tandis que le Pays de Galle utilise sa langue pour tenter d’accaparer le braggot (brag = malt et got = ruche), alors que des vestiges pousseraient à remonter encore dans le temps du côté des… vikings!

La dégustation:
Au service, une belle robe dorée aux reflets cuivrés et trouble se laisse surplomber par une belle mousse blanche abondante. Celle-ci se dissipe assez rapidement et laisse place à une invasion de bulles fines. Le nez, ouvert et complexe, porte sur des arômes de viande au barbecue, de fumé, d’aigre-doux et de fleur blanche, de miel et d’épices. L’attaque ronde débute sur l’amertume pour évoluer longuement vers une finale douce et mielleuse. L’alcool apporte une rondeur qui devient agréable après quelques gorgées. Des saveurs de pommes confites viennent souligner le côté gourmand de cette bière, parfaite pour mariner de la viande ou les accompagner.

Onze eerste braggot uit de Blacksmith-lijn is klaar en op voorraad. Incus -aambeeld in het Latijn- is een stevige Belgian Golden Strong Ale geworden van zo’n 12% alcoholvolume. Geen doordrinkertje, dus. Dankzij de ietwat zoete afdronk en de duidelijk aanwezige honingaroma’s in de neus kan je niet ontkennen dat Incus een honingbier is. Hij heeft een aangenaam hoppig karakter. Niet IPA hoppig, uiteraard. -Waarmee we uiteraard niet gezegd willen hebben dat er iets mis zou zijn met IPA’s. Ik ben GEK op IPA. Maar te veel hop zou het honingkarater volledig overweldigen. De hoppen die we gebruikt hebben zijn Equinox en Golding. Ze staan garant voor een subtiele bitterheid en-omdat we ook gedryhopt hebben- prachtig gebalanceerde hop aroma’s.

Incus ontwikkelt een mooie schuimkraag die evenwel niet erg lang houdt. Dit heeft te maken met het aandeel honing in de vergistbare suikers.

Or first braggot in the Blacksmith line is ready.  Incus -anvil in Latin- could be categorized als a Belgian Golden Strong Ale with an abv of about 12%. It’s not your everyday lager, evidently. Thanks to the slightly sweet aftertaste and distinctive honey aromas in the nose you can’t miss the fact that Incus is a honey beer. Incus’ character can be described as pleasantly hoppy. Not IPA hoppy, of course -for the record: I LOVE IPA’s but too much hop would easily overpower the honey character. The hops used are Equinox and Goldings. They impart a subtle bitterness and, because we dryhopped as well, beautifully developed hop aromas.

Incus will develop a nice head, but because of the amount of honey in the fermentable sugars, it won’t keep very long.

Incus: test #1

Gisterenavond hebben we het eerste flesje Incus opengetrokken. Het doel hiervan was om te kijken of de hoeveelheid CO2 na twee weken hergisten op fles al voldoende was toegenomen. Ja dus. Momenteel is Incus heerlijk parelend met een mooie schuimkraag. Hij is nog wat aan de zoetige kant, maar die suiker zal door de gist ng in een klein beetje extra alcohol en een hoop CO2 omgezet worden. Binnen een week of zes is hij dan echt helemaal klaar.

Yesterday evening we openend the first bottle of Incus to check whether the desired CO2 level had been reached after two weeks of bottle conditioning. So: yes. At the moment Incus is still a bit sweet. No problem though, that residual sugar will be gobbled up by the yeast to produce slightly more alcohol and some more CO2. In 6 weeks (give or take) Incus will finally be ready.

Het is weer een tijdje wat rustiger geweest op deze website. Een en ander heeft te maken met een aanval van cholera light (aka buikgriep +) die meteen gevolgd werd door wat best kan beschreven worden als de longpest.

Dat wil niet zeggen dat we hebben stilgezeten in de brouwerij. Een kort overzicht van wat er in de afgelopen week  aan werk verzet is.

The Blacksmith’s Grand Reserve

Als alles goed gaat, komt vandaag de pallet met flessen aan. We kunnen dan eindelijk van start gaan met het bottelen van The Blacksmith’s Grand Reserve. Om een duidelijk visueel onderscheid te maken met The Blacksmith’s Reserve, zal de Grand Reserve gebotteld worden in Bourgogneflessen in plaats van in Bordeauxflessen.

Grand Cru

The Blacksmith’s Grand Cru is bijna  waar hij moet zijn. Vandaag of morgen wordt hij overgepompt naar een nieuw vat om uit te klaren.

Session mede

We zijn bezig met een test batch (60 liter) voor een laag alcoholische (8,5%) mede. Het zal een eerder droge mede worden waaraan bramen en frambozen worden toegevoegd. Hij zal worden gebotteld op longneck flesjes van 33 cl en hergisten op fles. Op die manier krijgen we een sprankelende mede. Er zal daardoor een dun laagje sediment aanwezig zijn in de flesjes.

Incus

De opvolger van de Carolus Terminatorius zal Incus heten. Incus is latijn voor aambeeld. Deze braggot zal een alcoholpercentage van om en bij de 10% hebben. Van het moment >Incus gebotteld is, gaan we over tot de productie van de volgende braggot: Malleus. Je raadt het al: Hamer. Incus zou donkerblond moeten zijn, Malleus zal een donkere braggot worden.

Sanguis Burgundiae 2017 – Bosvruchtenmede

Gisteren (19 december) werd de Sanguis Burgundiae 2017 overgepompt van het gistings- naar het rijpingsvat. Daar werden de bosvruchten aan toegevoegd.  We hebben de hoeveelheid vruchten serieus opgedreven. Zo sterk zelfs, dat ik eerst een deeltje van het vat heb moeten overzetten op een kleiner vat. Het risico op overstroming was zeer reëel. Na een paar weken in het rijpingsvat kan hij gebotteld worden. De bosvruchtenmede blijft Sanguis Burgundiae heten. We hebben te veel protest van teleurgestelde mensen gekregen omtrent de naamswijziging naar Bosvruchtenmede. We zullen wel op het etiket verduidelijken dat het een bosvruchtenmede is.
Sanguis Burgundiae zal waarschijnlijk nog niet meteen te koop aangeboden worden. Hij moet normaliter nog even narijpen op fles.

It has been quite some time since we posted anything on this website. The reason behind that is a bout of Cholera light (aka stomach flu plus) swiftly followed by what best can best be described as the Pneumonic Plague.

This doesn’t mean that we did nothing in the brewery. A short review of what happened this week:

The Blacksmith’s Grand Reserve

If all goes well we should see the delivery of a pallet of empty bottles today. We can soon start to finally bottle The Blacksmith’s Grand Reserve.
For the sake of a clear visual distinction between The Blacksmith’s Reserve and Grand Reserve, we’ll be bottling in Bourgogne style bottles instead of in Bordeaux style ones.

Grand Cru

The Blacksmith’s Grand Cru is almost where it has to be, fermentation wise. Later this week (probably tomorrow) it will be transferred to drop clear.

Session Mead

We started a test batch (60 liters) for a low alcohol (8,5% abv) mead. It’ll be a dry-ish mead to which we’ll add blackberries and raspberries. The session mead will be bottled in 33 cl longnecks and be bottle conditioned. This will result in a sparkling mead. On the bottom of the bottle there will be a thin layer of sediment.

Incus

The successor of our Carolus Terminatorius braggot will be named Incus. Incus is Latin for anvil. This braggot will have an abv of about 10%. The moment it is bottled we’ll start the next one: Malleus. You guessed it: Hammer. Incus should be dark blond, Malleus will be dark.

Sanguis Burgundiae 2017 – Multi berry mead

Yesterday (19 December) we transferred the Sanguis Burgundiae 2017 from the fermentation to the maturation vessel. There we added the fruits to the mead. The quantity of fruits has been seriously increased. So much so that I had to transfer a part of the mead to a smaller vessel. The risk of overflowing was clear and present. After a few weeks in the maturation vessel, we’ll be able to bottle it. The multi berry mead will still be named Sanguis Burgundiae. We had too many people complaining the fact that we were going to name it for what it is: Multi Berry Mead. We will, however, state on the label that it is a berry mead.
Most likely Sanguis Burgundiae 2017 will not be for sale right away. It’s expected that it will have to mature a bit more once bottled.

Het is alweer een tijdje geleden sinds er nog eens een artikeltje verscheen op deze pagina’s. Wat kan ik zeggen? Mea culpa en druk, druk, druk. Het is dus niet zo dat er geen leven meer in de brouwerij zou geweest zijn. Integendeel. We hebben net de productiecapaciteit met 33% opgedreven en er staat nog een hele hoop te gebeuren.

Ondertussen staan er in de brouwerij een aantal potjes op het vuur. Nou ja. Ze staan eigenlijk gewoon op hun sokkel. Wij verhitten onze honing uiteraard niet. Wat zit er dan in de pipeline? Momenteel:

  • Een Blacksmith’s Grand Reserve 2017. Dat is een Blacksmith’s Reserve, maar met bonussen. Extra honing (25%) en meer eik. Deze jongen gaan we ook langer laten liggen. Ik heb net de meting voor vandaag genomen en vrijdag zou zijn gisting klaar moeten zijn. Dan heeft hij het beoogde abv en restsuikergehalte bereikt.
  • Een Moretum 2017. Ook deze is bijna klaar. Meer hierover in een volgende post
  • Een nieuwe braggot. De naam ervoor is nog niet beslist, maar ‘t zal een blonde zijn met een abv van om en bij de 10%.

En gisteren… hebben we de nieuwste telg opgezet. We hernemen de Sanguis Burgundiae maar hebben ondertussen een kleine strategiewijziging doorgevoerd mbt de namen. Hij zal gewoon ‘Bosvruchtenmede’ heten. Simpeler voor iedereen.

It has been a while since we last posted on these pages. What van I say? Mea culpa, we’ve been keeping busy. We just ramped up the production capacity by 33% and we’re not stopping there.

So, what’s in the pipeline?

  • The Blacksmith’s Grand Reserve. It’s a Blacksmith’s Reserve wit extra honey (25%) and more oak. It has nearly ccompleted its fermentation.  Friday it will get stabilized. We’ll let it age longer as well.
  • Moretum 2017. This one too is nearly there. More about this later.
  • A new, blond braggot. The abv should be eleven something percent.

And Yesterday we started the Sanguis Burgundiae 2017. We’ve changed the name to make it easier for every one. From now on it will be known as Very Berry Mead.

De zomervakantie komt krijsend tot stilstand. Back. To. Business!!

Vandaag is het brouwdag. We gaan voor een braggot, een honingbier dus, van zo’n 11% abv. Onze braggots zijn gewoonlijk amberkleurig maar degene die we straks in gang zetten zal blond tot donkerblond zijn. We hebben de gist geselecteerd, de mouten (gerst en tarwe) en de hoppen liggen klaar en de honing staat te popelen om mee te mogen spelen. Het brouwvolume zal rond de 60 liter liggen, gezien het een min of meer experimentele batch zal worden.

Sunday, Brewday

The summer recess comes to a screeching halt. Back. To. Business!!

Today it’s brew day. We’re making a braggot. A honey beer, so to speak. The abv we’re shooting for is about 11%. Our braggots usually have an amber hue, but this one will be blond to dark blond. The yeast is selected, the malts (barley and wheat) and hops lie in wait and the honey is aching to play along. The brew volume wil be about 60 liters, since this is a more or less experimental batch.

De Carolus Terminatorius heeft zonet zijn speciale behandeling gekregen. De primaire gisting loopt op zijn laatste beentjes en we hebben dus een speciale aromahop en nog een aantal specerijen toegevoegd. In hopzakjes uiteraard, zodat we de boel makkelijk weer kunnen verwijderen.

Yumyum?

Het bier (ehm… de braggot) ziet er nog niet erg smakelijk uit. Ik heb me toch over de uuugh-reflex gezet en geproefd. Dit. Dit is waarom we met diverse suikers en minipaddestoelen spelen… Ik ben nog niet helemaal zeker of ik dit wel in de markt wíl zetten of dat ik het gewoon voor eigen consumptie hou ?
