Wat is er de afgelopen week gebeurd?
What happened last week?

Het is weer een tijdje wat rustiger geweest op deze website. Een en ander heeft te maken met een aanval van cholera light (aka buikgriep +) die meteen gevolgd werd door wat best kan beschreven worden als de longpest.

Dat wil niet zeggen dat we hebben stilgezeten in de brouwerij. Een kort overzicht van wat er in de afgelopen week  aan werk verzet is.

The Blacksmith’s Grand Reserve

Als alles goed gaat, komt vandaag de pallet met flessen aan. We kunnen dan eindelijk van start gaan met het bottelen van The Blacksmith’s Grand Reserve. Om een duidelijk visueel onderscheid te maken met The Blacksmith’s Reserve, zal de Grand Reserve gebotteld worden in Bourgogneflessen in plaats van in Bordeauxflessen.

Grand Cru

The Blacksmith’s Grand Cru is bijna  waar hij moet zijn. Vandaag of morgen wordt hij overgepompt naar een nieuw vat om uit te klaren.

Session mede

We zijn bezig met een test batch (60 liter) voor een laag alcoholische (8,5%) mede. Het zal een eerder droge mede worden waaraan bramen en frambozen worden toegevoegd. Hij zal worden gebotteld op longneck flesjes van 33 cl en hergisten op fles. Op die manier krijgen we een sprankelende mede. Er zal daardoor een dun laagje sediment aanwezig zijn in de flesjes.

Incus

De opvolger van de Carolus Terminatorius zal Incus heten. Incus is latijn voor aambeeld. Deze braggot zal een alcoholpercentage van om en bij de 10% hebben. Van het moment >Incus gebotteld is, gaan we over tot de productie van de volgende braggot: Malleus. Je raadt het al: Hamer. Incus zou donkerblond moeten zijn, Malleus zal een donkere braggot worden.

Sanguis Burgundiae 2017 – Bosvruchtenmede

Gisteren (19 december) werd de Sanguis Burgundiae 2017 overgepompt van het gistings- naar het rijpingsvat. Daar werden de bosvruchten aan toegevoegd.  We hebben de hoeveelheid vruchten serieus opgedreven. Zo sterk zelfs, dat ik eerst een deeltje van het vat heb moeten overzetten op een kleiner vat. Het risico op overstroming was zeer reëel. Na een paar weken in het rijpingsvat kan hij gebotteld worden. De bosvruchtenmede blijft Sanguis Burgundiae heten. We hebben te veel protest van teleurgestelde mensen gekregen omtrent de naamswijziging naar Bosvruchtenmede. We zullen wel op het etiket verduidelijken dat het een bosvruchtenmede is.
Sanguis Burgundiae zal waarschijnlijk nog niet meteen te koop aangeboden worden. Hij moet normaliter nog even narijpen op fles.

It has been quite some time since we posted anything on this website. The reason behind that is a bout of Cholera light (aka stomach flu plus) swiftly followed by what best can best be described as the Pneumonic Plague.

This doesn’t mean that we did nothing in the brewery. A short review of what happened this week:

The Blacksmith’s Grand Reserve

If all goes well we should see the delivery of a pallet of empty bottles today. We can soon start to finally bottle The Blacksmith’s Grand Reserve.
For the sake of a clear visual distinction between The Blacksmith’s Reserve and Grand Reserve, we’ll be bottling in Bourgogne style bottles instead of in Bordeaux style ones.

Grand Cru

The Blacksmith’s Grand Cru is almost where it has to be, fermentation wise. Later this week (probably tomorrow) it will be transferred to drop clear.

Session Mead

We started a test batch (60 liters) for a low alcohol (8,5% abv) mead. It’ll be a dry-ish mead to which we’ll add blackberries and raspberries. The session mead will be bottled in 33 cl longnecks and be bottle conditioned. This will result in a sparkling mead. On the bottom of the bottle there will be a thin layer of sediment.

Incus

The successor of our Carolus Terminatorius braggot will be named Incus. Incus is Latin for anvil. This braggot will have an abv of about 10%. The moment it is bottled we’ll start the next one: Malleus. You guessed it: Hammer. Incus should be dark blond, Malleus will be dark.

Sanguis Burgundiae 2017 – Multi berry mead

Yesterday (19 December) we transferred the Sanguis Burgundiae 2017 from the fermentation to the maturation vessel. There we added the fruits to the mead. The quantity of fruits has been seriously increased. So much so that I had to transfer a part of the mead to a smaller vessel. The risk of overflowing was clear and present. After a few weeks in the maturation vessel, we’ll be able to bottle it. The multi berry mead will still be named Sanguis Burgundiae. We had too many people complaining the fact that we were going to name it for what it is: Multi Berry Mead. We will, however, state on the label that it is a berry mead.
Most likely Sanguis Burgundiae 2017 will not be for sale right away. It’s expected that it will have to mature a bit more once bottled.
