Original Sin – Pecatum Originale

Gisteren hebben we een partij geweldig appelsap gescoord voor onze volgende cyser. Het is geperst uit vijf verschillende oude appelsoorten en heeft een heerlijke zuur- zoet- bitter balans. Omdat we het met extra honing gaan vergisten (vandaar dat het een cyser wordt en geen cider) gaan we de zoetheid toch een beetje moeten uitbalanceren. Daarvoor hebben we ook nog een bootlading kweeperen waarmee we de mede zullen afwerken. Appels en kweeperen. Dat roept om een naam die te maken heeft met de (dun-dun-duuuuhn) erfzonde. Vandaar dat de werktitel van deze mede Original Sin is.

Botteling Grand Reserve

Vanavond wordt The Blacksmith’s Grand Reserve gebotteld. Er zijn al twee flessen mee gegaan naar de EMMA conference in Poznan waar ze erg goed onthaald werden. Vandaag worden de ca. 140 andere flessen ook afgevuld.
De labels zijn al binnen, dus alles kan snel vooruit gaan.

Incus II

Gisteren is het eerste flesje Incus II opengegaan. Hij werd door een -redelijk- onafhankelijk testpannel gekeurd en goed bevonden. We bestellen dus vandaag of morgen nog de labels zodat we hem begin december aan de webshop kunnen toevoegen.

Aqua Diabolica en Moretum

De twee recentste batches, Aqua Diabolica – onze habaneromede – en Moretum zijn ondertussen al even volledig uitgegist. Wanneer de bottelfrenzy in de mederij over is, kunnen we ze overzetten op hun rijpingsvaten. Van het ogenblijk dat gebeurd is, moeten we nog een maandje wachten en dan kunnen ze ook op fles.

Incus II. In a friggin #Frela glas

Yesterday we’ve secured a batch of wonderful applejuice for our next cyser. It was made by pressing 5 ancient apple varieties and the sweet-acid-bitterness balance is right on point. Because we’ll be adding quite some honey before the fermentation we’ll have to adjust the acidity a bit. What better way to do that than with quinces? Apple and quice. That just screams to be named in connection with the (dun-dun-duuuuhn) Original Sin*. Hence the working title of this mead.

*Yes, we’re aware of Tugwell Creek Farm’s Original Sin Cyser. We contacted them to ask if they would mind terribly if we made a similar cyser on the other side of the Atlantic.

Botteling Grand Reserve

Tonight we’ll be bottling the Blacksmith’s Grand Reserve. Two bottles got kidnapped to the EMMA conference in Poznan. They were very well received. Today we’ll fill the remaining 140-ish bottles.Vanavond wordt The Blacksmith’s Grand Reserve gebotteld. The labels are already printed, so from here on pout things will go swiftly.

Incus II

Yesterday we’ve opened the very first bottle of Incus II. It got sampeled by a -nearly- unbiased testing panel and awarded the seal of approval. Later today or tomorrow we’ll order the labels and the first week of december it will appear in the webshop.

Aqua Diabolica en Moretum

Our two most recent batches, Aqua Diabolica – a habaneromede – and Moretum have completetd their fermentation a few weeks ago. When the bottling frenzy in the meadery is over we’ll be able to put the in their maturing vessels. Once that’s happened we have to wait a month and they’ll be ready to be bottled as well.


** Yule Mead **

Vandaag wordt de Yule Mead gebotteld. Zoals al eerder aangekondigd gaat het om 37,5 cl flesjes. Een derde van de flesjes gaat naar de imker die de honing geleverd heeft en de rest zal voornamelijk op evenementen in het Antwerpse verdeeld worden. Er zijn in het totaal 100 flesjes voor verkoop beschikbaar en een twintigtal zijn al gereserveerd.

De mede zelf is een bochet; een mede op basis van gecarameliseerde honing. Dit heeft een caramel- en marshmallownoot in de smaak als resultaat met op het einde nog een verassend bittertje. De Yule Mead heeft gerijpt op gedroogde vijgen, dadels, abrikozen, pruimen, rozijnen, kaneel, gember, kruidnagel en sinaasappelzest.

Today we’ll be bottling the Yule Mead. As stated before: it will be bottled in 37.5 cl bottles. A third of the bottles will be gioven to the beekeeper that provided the honey. The rest of it will mainly be sold on events in the Antwerp region. In total we’ll have about 100 bottles available of which some twenty are already reserved.

This mead is a bochet. A mead made with caramelised honey. Because of this there are clearly recognisable carmel and marshmallow notes with a surprising little bitter note in the aftertaste. The Yule Mead has aged on dried figs, dates, apricots, plums, raisins, cinamon, ginger, cloves and orange zest.


EMMA 2018

De eerste officiële meeting van de European Mead Makers Association is achter de rug. We hebben eindelijk een heleboel gezichten die we enkle van op een schermpje kenden in levende lijve kunnen ontmoeten. Naast het uitwisselen van ideeën en informatie zijn er een heleboel nieuwe contacten gelegd en vriendschappen gesmeed. Het proeven van de verschillende medes heeft ook weer een hoop extra inspiratie opgeleverd.  Ik ben absoluut kapot maar bijzonder gelukkig dat we drie dagen in Poznan hebben kunnen doorbrengen.

Volgende week gaan we toch enige dietaire aanpassingen moeten doorvoeren. Ik vrees dat ik een periode op slaatjes en water zal moeten overleven. Ik kan me namelijk niet van de indruk ontdoen dat mijn equator bij het vertrek een kleinere straal had dan vandaag. De Poolse keuken is bijzonder lekker maar niet meteen de meest lichte.

The first official meeting of the European Mead Makers Association is over. Finally I’ve met some of the faces I only knew from a screen. Besides exchanging ideas, opinions and information we’ve added a lot of contacts and new friendships were formed. The sampling of each others meads resulted (as per usual) in a boatload of fresh inspiration. I’m absolutely exhausted and extremely happy that I got to spend the last three days in Poznan. 

I’m afraid that next week I’ll have to implement certain dietary changes. A period of sustaining myself with salads and water looms on the horizon. I can’t seem to shake the impression that my equator was somewhat smaller in diameter than today. Polish cuisine is beyond delicious but one can hadly call it light.

Twee jaar alweer… Op 6 november 2016 hebben we The Blacksmith’s Meadery opgericht. Ondertussen zijn we dus twee jaar verder. We hebben in die twee jaar al heel wat gerealiseerd en er zit nog veel meer in de pijplijn. Er zijn een aantal zaken waar we nog niet al te veel over kunnen uitweiden maar nog voor onze derde verjaardag gaan er weer heel wat veranderingen en spannende dingen gebeurd zijn.

Wat we al wel kunnen vertellen is dat er volgende week een aantal nieuwe batches gebotteld zullen worden. The Blacksmith’s Grand  Reserve is klaar en staat te bekomen van zijn laatste transfer naar het bottelvat. Ook de Yule Mead staat te popelen om op fles gezet te worden. Hiervan zullen een 100 flesjes van 37,5 cl beschikbaar zijn. De 50 overige zijn voor Miel du Ciel uit Mortsel die de honing voor deze mede geleverd hebben.

De Moretum en Aqua Diabolica zijn volledig uitgegist. Zij worden in de loop van volgende week van hun extra ingrediënten voorzien. Beide medes zullen overigens deelnemen aan de Mazer Cup International in Denver in maart 2019.

Op 23 november wordt het eerste flesje Incus II geopend. Als hij voldoende hergist is, wordt hij meteen aan de webshop toegevoegd.

Two years alreday. Time flies like an arrow. On November 6th 2016 we officialy founded The Blacksmith’s Meadery . The past two years we acomplished some great things and there’s a lot more in the pipeline. We can’t elaborate on certain things as of yet, but rest assured that come our third birthday some major changes and amazing stuff will have happened.

What we can tell you about is that next week we’ll be bottling some new batches. The Blacksmith’s Grand Reserve is ready. For now it’s relaxing in the bottling vat. The Yule Mead also is anxious to get bottled. We’ll be releasing 100 37,5 cl bottles. The 50 other bottles in the batch are for Miel du Ciel, the beekeeper that provided the honey for this batch.

Moretum and Aqua Diabolica are completely done fermenting. (For the technical people among us: they both are at 0.997). Sometime next week they will have their other ingredients added. Both meads will be competing in the Mazer Cup International in Denver, March 2019.

November 23rd we’ll be opening the very first bottle of Incus II. If the carbonation level is sufficient it will be added to the webshop immediately.
