Cherrynomus & Incus: update

Alles gaat perfect dusver. Zowel Cherrynomus Bosch als Incus zitten op schema wat de vergisting betreft. Morgenavond wordt Cherrynomus een eerste keer overgeheveld (en in één beweging een eerste keer gefilterd om de actieve gist te verwijderen). Incus II krijgt mag nog even voort rijpen op het vat. Later krijgt hij dan zijn dry hopping en mag hij nog even op eik gaan rusten.

So far so good. Both Cherrynomus Bosch and Incus are right on schedule fermentation wise. Tomorrow night Cherrynomus will be transferred a first time (whilst being filtered in the same go to remove the active yeast cells). Incus II will mature a bit longer in the fermentation vessel. Later it will be dry hopped and layered on oak.

Gisteren werden er twee ‘nieuwe’ medes boven de doopvont gehouden. Zowel Cherrynomus Bosch II als Incus II zijn momenteel in productie.

Er zijn een paar kleine aanpassingen aan de receptuur. Incus heeft (nog) meer mout gekregen en zoals eerder vermeld zijn we ook overgeschakeld op nieuwe hoppen. Citra en Mandarina Bavaria. Citra omdat die voor een frisse bitterheid zorgt, gecombineerd met een leuke citrus-touch die de zoete afdrong van de Incus perfect gaat uitbalanceren. Mandarina Bavaria omdat deze hop nog wat extra, diepere citrustoetsen zal toevoegen.
Cherrynomus Bosch zal zijn kersigheid niet enkel uit zoete (Tragana1) kersen  halen. In de primary fermenter zitten nu krieken (Lutovka2). Ook hier weer is het een zaak van de boel nog wat beter uit te balanceren. Ook de gist is gewijzigd. In plaats van een Sauternesgist die we tot nu toe gebruikten hebben we de mede geïnoculeerd met een Beaujolaisgist.

Als alles volgens plan verloopt zou Incus binnen ene week of 4 tot 6 op fles kunnen gezet worden. Voor Cherrynomus Bosch gaan we nog iets langer moeten wachten.

Yesterday we started two ‘new’ meads. Both Cherrynomus Bosch II and Incus II are as of now in production.

We made a few tweaks to the recipes. More malt was added to Incus and as mentioned before we switched hops. The new hops used are Citra and Mandarina Bavaria. Citra for it’s crisp bitterness, combined with a delicious citrus-touch. This will even better balance Incus’ sweet aftertaste.  Mandarina Bavaria as been chosen for it’s deeper citrus notes.
Cherrynomus Bosch won’t be relying on sweet cherries (Tragana1) alone for it’s ‘cherryness’. In the primary fermenter we’ve added tart cherries (Lutovka2). This of course (again) to better the balance sweet – sour. We’ve also switched yeast strains. Instead of the Sauternes yeast we’ve been using thus far we’re using a  Beaujolais yeast to inoculate the must.

If all goes according to plan, we’ll be bottling the Incus in 4-6 weeks. Al little while later Cherrynomus Bosch will suffer the same fate.

Incus II

Gisteren hebben we de ingrediënten voor onze tweede iteratie van de Incus binnengekregen. Naaste de gerste- en tarwemout hebben we ook reeds de hop geselecteerd. Waar Incus I zijn bitterheid van Equinox kreeg en zijn aroma van Belgian Goldings, zal hij deze keer een ietwat meer geprononceerd citrus karakter krijgen met Citra voor bitterheid en Mandarina Bavaria voor aroma. Qua honing blijven we dezelfde EU gemengde bloemenhoning gebruiken.

Volgende week wordt hij in gang gezet, binnen een maand, anderhalve maand tops wordt hij gebotteld.

Yesterday we received the main ingredients for the second iteration of our Incus. Apart from the Barley and wheat malts we’ve already selected the hop varieties. For Incus I we used Equinox for bitters and Belgian Goldings for aroma. Incus II will be a bit more ‘citrussy’; We’ll be applying Citra for bittering (and aroma) and Mandarina Bavaria for aroma. Honey-wise we’ll stay with our trusted EU wildflower honey.

Next week we’ll start the fermentation. In a month, a month and a half tops we should be bottling.
